THE EXPERIENCE

About this experience

Begin your experience at Kome Dreaming, a cozy café in Minato, just a short walk from Tokyo Tower and Zojoji Temple. After meeting your friendly English-speaking hosts, learn about the history of miso and its important role in Japanese food culture.

Taste several types of miso, such as white miso, red miso, and barley miso, and compare their color, aroma, saltiness, and depth of flavor. Your hosts will explain how regional ingredients and fermentation time shape the final taste.

Next comes the fun part: making miso yourself. Following step-by-step guidance, combine mashed soybeans with premium rice koji and prepare your own miso paste. No previous cooking experience is needed—the workshop is designed to be enjoyable and accessible for beginners.

At the end of the workshop, enjoy a comforting bowl of miso soup and take home approximately 700 g of the miso you made. Your hosts will also explain how to store and ferment it at home. After approximately 3 to 6 months, your miso will be ready to enjoy, giving you a delicious reminder of your time in Japan long after your holiday ends.

After making your own miso, taste amazake, a traditional Japanese drink also made with koji, and discover the fascinating world of koji!
